Program
The tour will begin with a visit to a Parmigiano Reggiano producer, where you’ll have the chance to witness all the stages of production of the world’s most famous cheese. From milk cooking and fermentation to the shaping, draining, salting, and aging process in the warehouse, you’ll see it all. The visit will conclude with a tasting of Parmigiano Reggiano of different ages.
Next, you will head to a family-run prosciutto factory on the Parma hills, to learn all the secrets behind the production of Prosciutto di Parma and enjoy a tasting of this delicious product, freshly hand-sliced!
You will then relax in a traditional trattoria in the heart of Parma, where you can savor local specialties such as tortelli alle erbette—delicious herb and fresh Ricotta cheese-filled ravioli—and torta fritta, a flavorful fried leavened bread.
The afternoon will be dedicated to exploring the historic center of Parma, starting with its magnificent Cathedral, which is among the main representative Romanesque buildings of the region and famous for the great void of the dome was frescoed by Correggio in 1526 with the Assumption of the Virgin. Then you will visit the Baptistery a symbol of the passage from the late Romanesque to Gothic era, made of pink marble from Verona, a masterpiece by Benedetto Antelami.
